Meet Chef Julian Hayes
Kitchenchapter is led by Chef Julian Hayes, a chef with more than twenty years of professional kitchen experience.
Julian’s journey into cooking did not begin in a luxury restaurant or a television studio. It started in a busy family-owned coastal tavern in Maine, where he worked as a dishwasher at 15. Before long, he moved onto the line and learned firsthand what it takes to work in a fast-paced professional kitchen.
Wanting to sharpen his skills further, Julian later attended the Culinary Institute of America. His career eventually took him to the Pacific Northwest, where he spent years training under James Beard Award-winning chefs. During that time, he developed a deep understanding of butchery, fermentation, seasonal cooking, and sustainable seafood.

For the last decade, Julian has served as the Executive Chef and co-owner of Oak & Alder, a critically acclaimed rustic-chic restaurant known for simple food made with care and precision.
Now, through Kitchenchapter, he shares the techniques, recipes, and practical cooking knowledge he has gathered over a lifetime in professional kitchens.
